Will Murray grew up in Bolton, Greater Manchester, and read Classical Literature at the
University of Birmingham before making his way into the kitchen. He learnt entirely on the job,
starting off as a kitchen porter in a local Italian restaurant. After graduating, Will joined Peak
Edge Hotel, nestled on the border of Derbyshire’s Peak District National Park, as a trainee
pastry chef.

Wanting to broaden his horizons, Will made his way to London in 2015 and met Jack Murray
while cooking at the two Michelin-starred Dinner by Heston. The chefs bonded over a mutual
love of creating delicious food from kitchen by-products, like fish heads, leek tops and lemon
peel, turning these waste ingredients into staff meals and snacks.

In October 2019 Will and Jack met hospitality entrepreneur James Robson and it was their
shared passion for creative and sustainable cooking that led to the birth of Fallow. They
departed Dinner, competed in the Brixton Cooking Competition and held subsequent
pop-ups around London. There was a sell-out two-week residency at Carousel in
Marylebone, a collaboration with Adam Handling at his then-new restaurant in Chelsea, and
a two-month pop-up at Spitalfield’s Crispin.

In March 2020, the trio launched their debut restaurant, Fallow, at 10 Heddon Street in
London. Having launched as a 12-week pop-up, their residency was extended due to the
COVID-19 lockdowns, and during its time they received numerous awards and accolades,
including a Michelin Bib Gourmand. Following the success, they secured a permanent site in
St James’s, which they opened in November 2021.

More recently in October 2023, Will and the team launched FOWL, a chicken shop pop-up
located behind Fallow in St James’ Market.
