Originally from Cornwall, Michelin-starred chef Tom Brown worked in restaurants around the South-
West including Rick Stein’s before he met two-Michelin starred Nathan Outlaw. Tom started working

for Outlaw at the St Enodoc Hotel in Rock where he quickly worked up the ranks to Head Chef. After
three years, he moved to London to be Head Chef at Nathan’s eponymous restaurant at The Capital
Hotel in Knightsbridge, where he retained their coveted Michelin star.
Tom opened his debut restaurant, Cornerstone in Hackney Wick in April 2018. The 46-cover restaurant
showcases Tom’s own style of simple, seasonal and produce-driven cooking. The menu, which changes
frequently includes; Pickled Oyster, Cucumber, Horseradish, Dill; Curned Gurnard, Roast Onion Dashi,
Chill, Black Olive, Anchovy; Hake Kyiv, Chanterelle & Cep Butter, Cauliflower and Poached Quince,

Winter Citrus Sponge and Baked Cream. The kitchen is a central feature, and doubles up as a counter-
bar, seating eight guests. February 2020 saw the launch of Sunday Sessions – a monthly session where

Tom invited some of Britain’s best chefs into the kitchen to cook a dish they love but rarely serve to
customers. Chefs who took part include Nathan Outlaw, Tom Kerridge and Nieves Barragan Mohacho.

Tom celebrated a double win at the National Restaurant Awardsin 2018, being named ‘Chef to Watch’
and seeing Cornerstone named ‘One to Watch’. Cornerstone was awarded ‘Best New Entry’ in the
2019 Good Food Guide and ‘Breakthrough Chef of the Year’ at the Food & Travel Reader awards.
Cornerstone also won ‘Best Newcomer’ at the Observer Food Monthly Awards 2018. Tom also
appeared on Great British Menu representing the Southwest, where his dish ‘Poor Man’s Goose’ was
the coveted main course the 2018 banquet celebrating 70 years of the NHS. For the 14th series of Great
British Menu, Tom appeared as a guest ‘Veteran Judge’ following his success in previous series. At the
2019 National Restaurant’s Top 100 Awards, Cornerstone was ranked #3. More recently, Tom Brown
also won the British GQ Chef of the Year 2020 and The Cateys 2020 Best Newcomer Award, and on
the 24th January 2021, after a hard year for the hospitality industry, Brown won his first ever Michelin
Star for Cornerstone in Hackney. In February 2022, it was announced that Cornerstone successfully
retained its star in the Michelin Guide Great Britain & Ireland 2022. This year, Cornerstone has been
listed in the Harden’s Guide top 100 restaurants in the UK for 2023.
In November 2023, Tom opened the doors to his new venture, Pearly Queen; an oyster bar and
restaurant located in Shoreditch.
